Today I had my second successful Sunday making a meal plan and doing the necessary meal prep. Next week will be a challenge because Craig works on Sunday but hopefully I figure it out. That will be a big test for me.
Tomorrow is my second weigh in day. I am nervous because I know I will be disappointed if I don’t have a loss because I’ve been working hard. I woke up this morning super sore from Body Pump and eventually ended up taking an Ibuprofen even though I know you aren’t supposed to do that. It took the edge off for a while and I did a 4 mile Leslie Sansone walking video. I was proud of myself. I had a lot of energy today and was able to resist some temptations – like Pringles and a delicious roll my husband got at Kroger’s.
But my mom made an amazingly delicious healthy dinner that helped me eat a good amount of food and stay on plan and not eat any of my exercise calories.
Also, we had a miracle at our house today. My son slept until 8:00 am. He has never. Ever done that. Ever.
I am going to drink my tea and relax for a few while my enchiladas cool! That’s what I made for my lunches this week. Chicken, black bean and sweet potato enchiladas. It’s one of my favorite recipes. It’s a high calorie lunch but my breakfasts are low as I planned bullet proof coffee and an oiko’s triple zero banana cream yogurt.
